The Good Times Just Keep Coming With Gracie

Life suddenly got really crazy for a few days so I haven't had a chance to post these pictures yet. On Tuesday night Josh entertained Annabelle and Gracie by making a fort in Annabelle's crib and filling it with stuffed animals. Then he decided to put the Dora tent in the crib and that was Annabelle's favorite! They were just so funny. Gracie wasn't sure what to think of it, she just wanted to pose for the camera!!

How fun! I used to love making forts when I was little.

Okay- the lemon bars recipe, I got from a friend, and I don't think it's a special one at all, so I'll share it with you. I always had the same problem with lemon bar recipes, so I tried a boxed version and it was terrible. Mine never set right, so they were always gooey.

The First Lemon Squares I've Ever Succesfully Made Recipe:

Stir together
1 C butter
2 C flour
1 C powdered sugar

Just mix it up until the butter moistenes the sugar and flour... it might seem a little dry at first- just keep stirring, it'll eventually turn very thick and moist. Then spred this into a 9x13 and smush it around with your hands until it's all evenly spread out and smushed. (smushed being the technical term)

Bake the crust at 350 for 20 minutes.

*My friend put in her notes she does it a little longer to make sure it's completely cooked through. I did mine for 20 and it was too long so my edges were really hard and crusty and I'm still scraping out the pan! So, just until you get that nice golden glow!

For the top part:

Beat 4 eggs
Then add 2 C. sugar (regular white, not powdered)
1/4 C flour
1/3 C lemon juice (from the bottle or those nifty plastic lemons...some people think this means lemonaide- I know, wierd)

Stir that all together then pour it over the hot crust once it's finished baking. Put the whole thing back in the oven and cook for 20 more minutes.

*This part I should have cooked a few minutes longer. Mine was a little gooey and slippery and messy at first. I put it in the fridge for a few hours and it was better. The day after consistancy, however, was perfect, so I guess it does better if it sits for a while.

How fun! Kailey and I wish we had a fort and a cool Dora tent like you guys do! That is so awesome! Kailey really wishes she could play with Annabelle all the time! We miss you guys SOOOOOOO much!
